Akki Roti / Rice Flour Roti
Akki Roti is very famous and common in southern part of Karnataka.We eat this for breakfast .There are many versions of Akki roti ,today i'll be giving you one of the simplest and delicious recipe of akki roti. 
Akki roti cooked along with dill leaves is one of the best combination the flavors complement eachother.My mom prepares ultimate akki roti's but till date i haven't excelled to her level .But still it comes out good.
Akki roti tastes better with Coconut Chutney and also with Groundnut Chutney . I always prefer to eat akki roti with coconut chutney without any tadka/tempering over the chutney ,you can also eat it on its own with ghee.Though it tastes good if you have it hot,you can still  have this akki roti any time in a day and still it remains super soft.

Ingredients:

Cooking Time:4 Min for 1 Roti | Makes: 4-5

Rice Flour: 1 Cup
Water: 1 3/4 Cup
Dill leaves : 3/4 Cup chopped
Onions: 1-2 Medium chopped
Coriander leaves: 2 Tbsp
Green Chilly : 2-3
Curry leaves:2 strings chopped
Cumin Seeds: 1 Tsp (optional)
Oil: 1 Tbsp
Salt:1 Tsp
Rice flour for dusting

Method:
Take water in a wide mouth vessel and keep it on a high flame when water starts to boil,lower the flame and sprinkle rice flour and salt, mix it well with the help of a spatula and  add oil to it and mix thoroughly such that there are no lumps.Close it with a lid and keep it on a sim for 5 minutes. Meanwhile chop all the greens and onions. Now open the lid again mix  and turn off the gas.Once cooled add all the chopped greens, onions, green chillies and cumin seeds (i forgot to add) to the rice flour mixture and knead well.


Then take some handful of dough and make balls out of it.If you feel the dough is not stiff enough to make balls you can add little rice flour to it. The above mentioned water and rice flour is precise but still sometimes because of the salt and onion it might become little watery. Take care of it or else you'll be not able to roll the dough. Now take aluminum coated paper plate smear some oil and place the ball over it and using hands you can spread it easily  into a round roti as thin as you required, if dough is stiff wet your palm and spread.


If you are not comfortable using your hands you can roll it using rolling pin by dusting some flour. Now  heat the iron griddle or non stick tawa ,once its hot place the paper plate facing roti side on to the griddle and after a second remove the paper plate.
Drizzle some oil/ghee on sides of roti and cook on both sides. It gets cooked within 3 minutes.


Serve Akki Roti with Coconut Chutney and enjoy!
