Tomato Pulao / Tomato Bath

Tomato Bath/Tomato Rice

Tomato Bath/ Pulao is is one of the best lunch box recipe. There are many versions of  tomato bath.I have tried and tested many versions too but this modified version of tomato bath is the best i have ever tasted.
What makes this tomato bath/pulao different from other tomato rice is the use fenugreek/methi leaves which enhances the taste of  tomato bath with flavor of methi. It tastes apt when accompanied with onion raita.

Jeera Rice: 1 1/2 Cups
Tomatoes: 4-5 Large
Onions:2 Large
Fenugreek / Methi Leaves:1 Cup
Water: 1 3/4 Cup Water
Red Chilly Powder: 1/2 Tbsp + 1/2 Tsp
Oil:3 Tbsp
Ghee:1/2 Tbsp
Lemon Juice: 1 Tsp
Salt: 1 1/2 - 2 Tsp
Coriander leaves for garnishing : 1 Tbsp

For Grinding
Fresh Coconut grated: 1/3 cup
Ginger Garlic Paste: 1 1/2 Tbsp
Cinnamon: 1' Inch stick
Green cardamom Pod:1
Coriander leaves: 1 Tbsp
Turmeric:1/2 Tsp

Soak rice for 10-15 minutes.Drain and keep it aside. Make a smooth paste by grinding above ingredients if required add very little water. Take a pressure pan and heat 3 Tbsp oil,add onions and fry till it looks pink,add methi leaves fry till water content disappears.

Add the above grounded paste and fry well for 2-3 minutes till you get nice aroma then add finely chopped tomatoes saute for a minute and add red chilly powder saute on a medium heat till tomatoes are nicely cooked and oil leaves the corner. Now add rice and mix well and saute for 3 minutes.
Finally add hot water ,salt and pressure cook for a whistle.

Once pressure is released, add ghee,lemon juice,coriander leaves and mix well.Serve with onion raita.

My Notes:
1.Water content is what you need to take care.As the above recipe is cooked using a pressure cooker and also we add grounded paste and tomato which has water content  so the water used in the above recipe is less.
2.Soaking rice helps you get smooth rice.
3.Adding hot water while cooking helps to cook food faster.
