Stuffed Mooli Paratha / Stuffed Radish Flat Bread




Stuffed Mooli Paratha
Radishes are a non starch vegetable with lots and loads of health benefits. This root vegetable is very low in

calorie and rich in vitamin C,beta carotene and also aids digestion.Radish has been proved to be very good for diabetics as well. Radishes has low glycemic index .So eating uncooked radishes are much more beneficial than cooked ones.So i'm here with a diabetic friendly recipe Mooli Paratha.

Ingredients:

PrepTime: 5 Minutes | Cooking Time:15 Min |Serves : 3- 4  

For Stuffing
Radish: 3 Cup Grated
Onion: 1 Medium , Finely chopped
Ginger Garlic Paste:2 Tsp
Green Chilly: 2 Finely Chopped
Mint leaves:2 Tbsp Chopped
Coriander Leaves: 2 Tbsp Chopped
Cumin Seeds/Jeera :1 Tsp
Amchur Powder: 1/2 Tsp or lime juice: 1/2 Tsp
Garam Masala: 1 Tsp
Turmeric:1/2 Tsp
Salt : 1 + 1/2 Tsp
Oil: 2 Tbsp

For Paratha Dough
Wheat Flour:2 Cups
Salt:1 Tsp
Oil: 1 Tsp

Method:
Wash, peel and grate radish, sprinkle 1/2 Tsp of salt over it and set aside for 15 minutes. Squeeze out excess water from the grated radish .To this water add wheat flour, salt,oil and knead it a smooth dough Keep it close aside for 30 minutes.




Chop onions and greens.Take a wok, heat oil ,add  cumin seeds once it splutters ,add onions,ginger garlic paste,green chillies saute,add fresh coriander ,mint leaves, turmeric,amachur powder,salt and fry well.Turn off the heat.Add grated radish and mix well. Stuffing will be ready.



Take a small ball of dough , dust some flour and roll into a small size as shown in the picture. Place a spoonful of filling at the center and close the edges ,refer picture. Now roll it into a paratha of desired size.



Heat tawa/griddle drizzle some oil/ghee place paratha over it and cook on both the sides till you seen brown spots or untill cooked. 



Serve  hot with curds and pickle of your choice.




My Notes:
1.To get maximum health benefits i have not cooked radish. If you prefer to cook  then you can cook it just for a minute or two.
2.You can even roll one chapathi spread the filling evenly cover with one more rolled chapathi ,seal the edges.Roll slightly and cook it on tawa in medium heat.
