Kolhapuri Egg Masala

Kolhapuri Egg Masala is very spicy and delicious egg gravy.I had got this recipe from one of  GP's Cousin , though that recipe was good i never used to get more gravy,so i
modified a little from the original recipe to get a thick gravy.I and GP both love the taste of this spicy curry.If i wish to have anything spicy ,i normally cook this egg gravy.And i love to eat it with either Mughlai Paratha or Rumali roti.You can serve with any Roti,Naan,Paratha .

Egg:4-5 Boiled
Onion:2 Medium
Tomato:2 Medium
Ginger:1 " inch Piece
Garlic:6-7 Cloves
Dry Red chilly:5-6
Coriander Seeds:3/4 Tsp
Black Pepper Corns:1 Tsp
Copra:2 Tbsp
Kuskus/Gasgase/ Poppy Seeds:1/2 Tsp
Turmeric:1/4 Tsp
Garam Masala:1/2 Tsp
Oil:2 Tbsp
Ghee:1 Tsp
Water:3/4 - 1 Cup
Coriander Leaves:2 Tbsp for garnishing
Salt to Taste.

In a NonStick Pan,heat 2 Tbsp oil,add dry red chilly,coriander seeds,black peppercorns, onions,ginger,garlic and fry till onion turns brown.Add copra,Poppy seeds and fry till fragrant Add  turmeric and garam masala saute and add tomatoes,little salt and fry tomato cooked completely.

Once its cooled,grind into a smooth paste.

Boil egg ,remove shell and slice into 2 halves and keep it aside.

In the same non stick pan,add ghee,put above grounded masala and saute for a minute.Add mixer rinsed water to the masala,add salt to taste.

Once it starts to boil,add boiled eggs and sim for 5-8 minutes.Finally garnish with coriander leaves.

Serve hot with Roti,Paratha.

I enjoyed with Rumali Roti.

My Notes:

  • You can use  Red chilly powder(2 Tsp)  instead of  Dry Red Chilly and Coriander Powder(1 Tsp) for Coriander seeds.
  • I like it to be as a thick gravy,you can adjust water content as required.
  • If you want it to be less spice,then reduce the amount of red chilly to 3-4. I had used 3 Guntoor red Chillies and 3 Byadgi,so it was not that spicy because of Byadgi Red Chillies.
