Instant Rava Paddu
Paddu is a south indian breakfast which is done by using variety of dals and rice,which is soaked for few hours,grinded and then fermented overnight.But here I have tried doing
instant paddu with rava,which was quite good with coconut chutney.This is my own recipe,I got up late this Saturday and there was heavy rains,I was in no mood to prepare the same kind of breakfast,so thought of this and the basic idea was from instant rava idly,rava dosa .I was really very happy with the outcome.......,tasted better than rava idly /dosa though ingredients were same.......,But the only drawback is you need to have it hot just like anyother breakfast prepared from rava,totally a good breakfast ☺

Rava /Sooji :1 Cup
Rice Flour:1/2 Cup
Maida/Refined Flour:1/4 Cup
Sour Curds:2 - 3 TbspTbsp
Oil :2 Tbsp + as required for drizzling (3-4 Tbsp)
Mustard Seeds:1 Tsp
Channa Dal :1 Tbsp
Urud Dal:1 Tbsp
Moong Dal:1 Tbsp
Jeera/Cumin Seeds :1 Tsp
Onion Chopped:2 Medium
Carrot:1 Grated
Curry Leaves:2 Sprigs Chopped
Green Chillies:2-3 Chopped
Coriander Leaves :2-3 Tbsp Chopped
Cooking Soda:Pinch
Water As required
Salt as required

Heat 2 Tbsp oil in a non stick pan,once its hot add mustrad seeds allow it to crackle,add jeera ,once it starts changing the colour add channa dal,urud dal and moong dal .When it starts to change colour add rava/sooji ,mix well and keep it on a low flame for 4-5 minutes stirring in between and turn off the heat.

Meanwhile  chop onions,grate carrot and chop greens.Add these to above slightly roasted rava/sooji.Also add rice flour,Refined flour ,cooking soda and salt.Mix well.

Now add curds and water.Keep adding water slowly  and prepare thick batter to the consistency of idly batter.Keep it aside for 5-10 minutes.

Heat Paddu griddle and add 2-3 drops oil to each chamber,take spoonful of batter and pour it into each section,Drizzle some oil over the batter,close the lid and allow it to cook for 4-5 minutes,once you open the lid you can see the pores here and there,now drizzle some more oil ,remove it with a help of a spoon and turn it other side and cook for 1-2 minutes.

Paddu will be ready to serve with coconut chutney.It tastes better only when you have it

hot with ghee and coconut chutney :)
