Spanish Potato Omelette is referred as Tortilla Espanola,it is a thick omelette made with fresh potatoes. Spanish Omelette is widely eaten in Spain . Texture and thickness of this potato omelette varies from regions.

Source says that this dish can be served as a appetizer or a light dinner .But in my home it can never be served as a dinner ,it can only work as a evening snack.From the day I saw this recipe on a TV show I wanted to try this as it was very simple and easy.

Sunday’s ,I usually wake up late by 30 minutes as I will not be in any rush.This extra 30 minutes of more sleep easy to go breakfast like Spanish Potato Omelette with a hot cup of Masala Tea , makes my day.

Other sunday morning, breakfast which I often do are : Classic French ToastSpicy Oats Omelette ,Chessy Bell Pepper Toast  and  Scrambled Egg with Mushroom .

Ingredients
  • 4 Eggs
  • 2 Potatoes - Medium to large ,sliced
  • 1 Onion Chopped
  • 1 Fresh red chilly chopped
  • 2 Tbsp Fresh Coriander leaves chopped
  • 1 Tsp Pepper Powder
  • 3/4 Tsp Salt or as required
  • 2 Tbsp Olive Oil
Instructions
  1. Wash,clean,peel and slice potatoes into medium thickness.Cut sliced potatoes into 2 halves.

  2. Cut onion into small chunks, chop red chilli and coriander leaves.

  3. Heat skillet,add  1 Tbsp oil,onions,potatoes ,red chilly and fry well till potatoes are cooked completely and onions turn brown.

  4. Take a bowl add eggs,add  red chilli,coriander leaves,salt , pepper and beat well.

  5. For this add cooked potato and onion mixture mix it.

  6. On the same skillet ,drizzle some oil and pour the batter.

  7. Cook for 3-4 minutes on a medium to low heat or till bottom becomes firm ,loosen the corners.

  8. When omelette is still runny on top close a plate on skillet and turn the skillet upside down ,so that omelette lies on the plate.

  9. Now slide the uncooked side on to skillet and cook for 3 minutes on medium heat

  10. Once,it's completely cooked on both the sides.Turn of the heat.

  11. Cut it into wedges and serve hot with a cup of tea/coffee.

Step By Step Directions on making Of Spanish Potato Omelette:
