Goli Baje | Mangalore Bajji Recipe

Goli Baje are street food from Mangalore. It's mildly spiced, crispy outside and spongy, soft fritters with a hint of sweetness.

Ingredients

  • 1 Cup APF / Refined flour / Maida
  • ¼ teaspoon Cooking Soda
  • ¼ teaspoon Sugar
  • ½ teaspoon Salt
  • Cup Sour Curds homemade preferred
  • ¼ cup water or less as required
  • ½ teaspoon Ginger grated
  • 1 teaspoon Cumin Seeds
  • 1 tablespoon Curry leaves Chopped
  • 1 tablespoon Coriander leaves. Chopped
  • 1 Green chili chopped
  • Oil for frying

Instructions

  • Add 1 cup All purpose flour, sugar , salt and cooking soda , mix well.
  • Now add in ⅓ cup sour curds and mix well with flour.
  • Take ¼ cup water and add water part by part to flour and mix well. Batter needs to be thick .
  • Now sprinkle 1 -2 tablespoon of water on top of batter , cover lid and let batter sit for 2 to 3 hours.
  • After 3 hours , add ginger, green chillies, curry leaves, coriander leaves and cumin seeds to batter.
  • Mix well everything with wired whisk.
  • Now get your hands into batter. Stretch thick batter with hands and throw it back into bowl. This is a method used to beat the batter. Constantly do this for 4-5 minutes. This beating process is really important to get a crispy and spongy fritters.
  • Heat oil for frying , drop batter from little height so that it turns round ,automatically.
  • Turn and fry goli baje until it turns golden color on all sides.
  • Remove fritters from oil , place on absorbent paper and serve hot/ warm with coconut chutney.
