Ingredients

  • ½ cup Ragi Flour
  • cup Moringa Powder
  • 5-6 no's Dry Figs
  • 10-12 no's Dates de seeded
  • ¼ cup Raisins
  • ¼ cup Cashews
  • ¼ cup Almonds
  • ¼ cup Pistachios
  • ¼ cup Dry Coconut
  • ¼ cup Jaggery or as required
  • 1 teaspoon Cardamom Powder
  • 3 tablespoon Ghee / Clarified Butter
  • 2 tablespoon Desiccated Coconut Powder

Instructions

  • Soak dry figs and dates in warm water for 15 to 20 minutes.
  • Heat 1 tablespoon of Ghee/ Clarified Butter in a pan , add ¼ cup of ragi flour (finger millet flour) and roast till fragrant.
  • Add ⅓ cup of moringa powder, mix well and continue to roast for 3-4 minutes on a low flame. Moringa has a strong henna/ matcha like smell. Transfer to a mixing bowl and set aside till use.
  • In the same pan, add all dry nuts and roast till fragrant.
  • Lastly add, dry coconut and roast, when it turns aromatic, turn off the stove. Let this cool down
  • Transfer to a blender/ mixer jar and blend to a coarse powder.
  • Now remove soaked dry figs and dates from water, add to blender. Along with it add raisins and blend to a smooth paste.
  • To the same pan, add 1 tablespoon of Ghee/ clarified butter.
  • Now tip ground dry fruits paste, stir and cook well on medium heat till water dries up. Dry fruits paste forms a mass and becomes hard to stir, at this point regulate flame to simmer.
  • Add in dry nut powder , roasted ragi /finger millet flour and cardamom powder.
  • Mix well everything , add 1 tablespoon of ghee/ clarified butter and mix.
  • Now taste the mixture and adjust the sweetener. This depends on the sweetness of fid, dates and raisins used. So amount of jaggery may vary depending on the sweetness of the dry fruits used. I used ⅓ cup of jaggery powder.
  • On simmer mix well everything , till jaggery melts completely. Turn off the stove
  • When the mixture is still warm , bind into small balls . And roll in desiccated coconut. Though rolling in desiccated coconut is completely optional , I would insist as the very first bite into the ladoo may overpower the taste with flavours of Moringa.
  • Store in a air tight container and eat as and when required.

Notes

  • As an alternative to jaggery can also use Coconut Sugar
  • Always taste and adjust the sweetner as sweetness from dry fruits varies from different quality
  • Can also little clarified butter / ghee while binding into balls.
  • Bind the mixture into balls when its still warm , as there is no much sugar syrup / jaggery syrup is used to hold on to shape.
