Kidney bean salad recipe | Rajma Salad

Kidney bean salad is ahealthy protein packed salad made with boiled kidney beans , steamed corn ,onions, tomatoes , bell peppers , spices and lime juice.

Ingredients

  • ½ cup Rajma/ Kidney beans
  • ½ cup Sweet Corn
  • ½ cup Onion chopped
  • 1 cup Tomato chopped
  • cup Bell peppers chopped
  • 2 no Green chilli chopped
  • ½ cup Fresh coriander leaves Chopped
  • 2 garlic cloves chopped
  • ½ teaspoon Blackpepper powder
  • ½-1 teaspoon Cumin powder
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil extra virgin
  • Salt to taste

Instructions

  • Wash the kidney beans and soak in enough water for 8-10 hours.
  • Drain the water and add the beans in a pressure cooker.
  • Add 2.5 cups of water and pressure cook for 2-3 whistles on high, till beans are softened.
  • Drain the water and reserve it to use later use, it’s very nutritious and can be added to make rasam, curries or kneading dough.
  • Steam sweet corns and set aside.
  • Add boiled kidney beans in a bowl.
  • Add steamed sweet corns
  • Add all the remaining ingredients and mix well.
  • Rest for 15 minutes before serving as all juices meld together.

Notes

Canned beans and corns can be used to make this salad. Drain and rinse them well before using in this recipe.
