Masala Puri Chaat

A spicy gravy made with dry green peas is served with puri , tidbits of assorted vegetables and crunchy sev . It is one of the most popular chaat in Karnataka.

Ingredients

To Pressure Cook

  • 1 cup Dry Peas , soaked for 7-8 hours
  • 1 teaspoon Salt
  • 2 no Potatoes, medium size
  • 2 cups Water

For Masala Paste

  • 2 teaspoon Oil
  • 1 inch Cinnamon Stick
  • 2 no Cloves
  • ½ teaspoon Jeera / Cumin Seeds
  • ¼ teaspoon Black peppercorns
  • 1 no Marathi Moggu
  • ¼ teaspoon Stone Flower
  • ½ cup Onion , chopped
  • 2-3 no Garlic cloves
  • ½ inch Ginger
  • 3 no Green chillies
  • ½ teaspoon Red Chilli Powder
  • ½ teaspoon Coriander Powder
  • ½ tablespoon Mint Leaves
  • 2 tablespoon Coriander Leaves
  • ½ cup Soaked Dry Green peas , cooked

For Masala Gravy

  • 2 tablespoon Oil
  • ¼ teaspoon Turmeric Powder
  • ½ teaspoon Red Chilli powder
  • ½ teaspoon Dry Mango Powder / Amchur powder
  • ½ teaspoon Chaat Powder
  • 2 ½-3 Cups Water
  • 1 ½ -2 teaspoon Salt or as required

For Assembling

  • 5-6 no's Puri , crushed
  • ¾ cup Masala Gravy
  • 2 tablespoon Tomatoes , chopped
  • 2 tablespoon Onions , chopped
  • 2 tablespoon Boiled Potatoes , mashed
  • 1 Tbsp Carrot , grated
  • ½ tablespoon Coriander Leaves
  • 2 tablespoon Sev
  • 1 pinch Garam masala powder
  • 1 pinch Chaat masala
  • 1 pinch salt
  • Lime Juice , few drops

Instructions

  • Pressure cook soaked dry green peas , 2 boiled potatoes , ½ teaspoon of salt with 2 cups of water for 3-4 whistles.
  • Allow pressure to release on its own . Peel potato skin , mash and set it aside.

For Masala Paste

  • Heat 2 teaspoon oil in a pan , add cinnamon stick , cloves, black peppercorns, cumin seeds , stone flower , Marathi moggu and saute well.
  • Add ½ cup chopped onions, 2- 3 garlic cloves , ½ inch ginger , 3 green chillies and saute till , raw smell goes off.
  • Now add in ½ teaspoon red chilli powder , coriander powder , mint leaves , coriander leaves and mix well.
  • Turn off the stove /heat . Allow it to cool
  • Transfer the sauteed masala into a blender and blend to a coarse paste.
  • Add ½ cup of boiled green peas ,to this blended masala , add little water and blend to a very smooth paste.

For Masala Gravy

  • Heat 1 tablespoon of Oil , add ⅛ teaspoon of turmeric powder , ½ teaspoon of chilli powder .
  • Instantly add the above ground paste and mix well.
  • Add 1 ½ - 2 cups of water and bring it to boil.
  • Now add in salt , ½ teaspoon of dry mango powder and chaat masala .
  • Add in boiled green peas . Adjust water if needed , once it comes to boil ,keep it on simmer and set aside.

To Assemble

  • Crush 5-6 puris , add 4 ladle full of hot masala gravy along with green peas.
  • Top it with chopped tomatoes, grated carrots, chopped onions, boiled potatoes and coriander leaves.
  • Sprinkle pinch of salt , chaat masala , garam masala powder.
  • Add few drops of lime juice and top with some crispy sev and serve immediately.
