Lemon Coriander Chicken Soup

Ingredients
  • 21/2 -3 Tbsp Lemon Juice
  • 1 Cup Fresh Coriander Leaves finely chopped
  • 1 Tbsp Carrot finely chopped
  • 1 Tbsp Cabbage finely chopped
  • 1 Tbsp Green beans finely chopped
  • 1 Green Chilly finely chopped
  • 1 Tsp Garlic finely chopped
  • 1 Tsp Ginger finely chopped
  • 1 Onion finely chopped
  • 1 Tbsp Clarified Butter / oil
  • 1 Tsp Cornflour
  • 2 Tbsp Water
  • 1 Tbsp Pepper Powder or as required
  • 1 1/2 Tsp Salt or as required
For Chicken Broth
  • 250 grams Chicken Soup pieces ( neck , leg and bone pieces)
  • 1 Medium onion cut into cubes
  • 1 Celery Stalk
  • 1 Medium Carrot cut into chunks optional
  • 1 Bay Leaf
  • 1 Inch Cinnamon Stick
  • 1 Clove
  • 5 Cups Water
Instructions
  1. Heat 1 Tbsp of oil,add chopped garlic,ginger,onion and all other chopped veggies and saute for a minute.

  2. Add 3/4 Cup chopped coriander leaves and saute for a minute.

  3. Add chicken stock/Broth and bring it to boil.Add cooked shredded chicken,cook for a minute.

  4. Dissolve 2 Tsp of cornflour in 2 Tbsp Water,add to the above chicken stock,cook for 2 minutes and turn off heat.

  5. Add remaining coriander leaves, lemon juice,salt and pepper. Serve Hot

For Chicken Broth
  1. In a vessel ,add 1/2 Tsp of oil ,add Bay leaf , Cinnamon ,cloves , Onion , Carrot ,celery and chicken soup pieces ( Neck ,leg and bone pieces) 

  2. Add 5 cups of water , bring it to boil  and simmer it for 30-45 minutes, so that water gets reduced to 3 cups.

  3. Strain the water ,cool it ,store in a glass jar and use it as required.

 

Step -By- Step Directions on Making of Lemon Coriander Chicken Soup

1.Heat 1 Tbsp of oil,add chopped garlic,ginger,onion.Add all other chopped veggies and saute for a minute.

2.Add 3/4 cup chopped coriander leaves and saute for a minute, add Chicken Stock and bring to boil.

(If you don’t have chicken stock,You can cook chicken bones /chicken with a bay leaf,1 ” inch cinnamon stick, 1 clove ,half onion,celery and 5 cups of water ,simmer and cook till water reduces to 4 cups. Strain the stock and use it.)

3.Add cooked shredded chicken and cook for a minute.

4.Dissolve cornflour in 2 tbsp water and add to the above chickens stock,cook for 2 minutes. Turn off the heat.

5.Add 1/4 cup chopped coriander leaves,lemon juice,salt and pepper.

Serve hot
