    Roasted Eggplant Chat
    Eggplant/Aubergine is a very popular in any indian family for preparing bharta,Baingan Bharta. Eggplant is very good source of dietary fiber and very low in calories.If you are on
    a diet ,then this is one of the healthiest choice. I'm trying very hard these days to reduce Gp's weight so trying out many healthy recipes which includes less oil, tastes good and makes us feel fuller.You can try this  healthy recipe for a evening chat or dinner with a veg soup,to keep you full.I was aware that they just roast and eat eggplant .......,so i just tried it out with my own twist.Do try this ,its a  very healthy option 🙂 and it tastes good too.I liked everything about this dish,but my husband felt i should have trimmed the skin of eggplant as we do it in baingan bharta....! Definitely one would love this for its taste and ofcourse for its healthy benefits of this vegetable.:)

    Ingredients:

    Category:Vegetarian | Cuisine : Fusion | Course: Snack
    PrepTime : 10 Minutes |Cooking Time: 10 Minutes | Makes: 10-12

    EggPlant: 1 Big 
    Carrot Grated:¼ Cup
    Radish Grated:¼ Cup
    Onion Chopped:2 Big
    Tomato Chopped:1 Medium (optional)
    Coriander Leaves:3-4 Tbsp
    Pomegranate Kernels:¼ Cup
    Chilly Powder:½ Tsp
    Chat Powder:1 Tsp
    Salt: As required
    Olive Oil:2 -3 Tbsp
    Spicy Red Chilly curry Paste:1 Tbsp

    Method:
    Wash and pat dry eggplant.Heat griddle/tava and drizzle some oil over the griddle/tava.Slice eggplant into ¼ " thick discs.Grease oil on both sides of the disc,smear some¼ teaspoon of  red curry paste on one side of egg plant slice.


    Place the egg plant slices on the tava and roast on both sides till it turns golden colour and keep it aside.

    Mix  chopped onion,tomato,carrot,radish,coriander leaves,salt,chat powder,red chilly powder.Increase /decrease the chat powder as per your taste. 


    Place the 2-3 tablespoon of above mixture over roasted eggplant slices,and serve .


    My Notes:

    • If you don't have red curry paste ,you can use some green chutney.
    • You can add some sweet corn kernels too for chat mix. 
    • There is no specific quantity /ingredients for the chat mix you can add as per your taste.
    • You can trim the skin and then roast it too,if you feel its very thick.
