    Chicken Baida Paratha

    Chicken Baida Paratha / Baida Roti is a delicious and tasty chicken snack. Where Chicken Keema is cooked along with spices, stuffed inside a roti , coated with egg batter and it is then shallow or deep fried. Baida Roti is also popularly known as  Egg roti. This is one of the yummy street food of Mumbai. Few days before I had been to a restaurant where Mumbai street festival was going on and they were serving this yummy roti. I tasted this and at once I became a huge fan ,I straight away walked to the chef and started asking what was it and how actually they do it.
    The restaurant ambience was in accordance with street food theme  and there was a big crowd near the stall, hence couldn't actually get the recipe. Even after a month ,the taste of that baida paratha was lingering on my tongue. Hence thought to give a try at home. On googling found very few  blogs where they had explained about baida paratha.......,as always went through all the recipes from few websites,blog and finally adapted as I needed. Well, to my surprise , though I tried for first time , Baida Roti / Baida Paratha turned out to be one of the best and yummy filling snack. If you are a non vegetarian then  definitely one should try this. 

    RECIPE CARD OF CHICKEN BAIDA PARATHA

    Ingredients:
    Category:NonVegetarian|Cuisine:Mumbai |Course:Street Food/Snack
    Preptime:10 Minutes|Cooking Time:45-55 Minutes|Serves:8-10

    For Dough
    All Purpose Flour/Maida :2 Cups
    Egg:1 No
    Warm Milk:⅓ Cup
    Water:¼ Cup
    Oil: 3Tbsp
    Salt:1 Tsp
    Baking Powder:¼ TSp
    For Filling
    Chicken Kheema / Minced Meat: 500 grms
    Onion Chopped:2 
    Ginger Garlic Paste:2Tbsp
    Green Chillies:6
    Turmeric:¼ Tsp
    Red Chili Powder:1.5 Tsp
    Coriander Powder:1 Tsp
    Garam Masala:½ Tsp
    Oil:2 Tbsp
    Chopped Coriander leaves: 2 Tbsp
    Mint Leaves:½ Tbsp
    Salt: As required
    Lime Juice:1 Tsp
    For Rolling roti and stuffing
    Oil :4-5 Tbsp
    Egg:3-4 No's
    Salt:½ Tsp
    Pepper Powder:1 Tsp

    Step by Step Directions to make Chicken Baida Paratha

    Take all purpose flour,salt,baking powder,egg and 1 tablespoon of oil and mix well,when it looks like crumbs add warm milk and add water 1 tablespoon at a time and start kneading the dough.
    Add water little at a time and prepare a dough,start kneading well while kneading it reaches a point where it becomes sticky and difficult to handle.Now add 1 tablespoon of oil and knead well till it becomes smooth and a pliable dough.Now smear a tablespoon of oil,and cover it with a kitchen towel and let it rest for minimum 30 minutes.(I had kept it for 3 hrs)
    Prepare the stuffing,Take a pan ,add heat oil add chopped onions,ginger garlic paste,green chilies and saute well,till the raw smell goes off.
    Now add all the spice powders and saute well.For this add minced meat or chicken kheema ,add salt,saute well for 5 minutes and close the lid and cook well for 15-20 minutes.
    Open the lid and cook till the water completely dries.Now add chopped coriander and mint leaves,lime juice mix well,Adjust salt or spice if needed and keep it aside.
    Divide the dough into 10 balls of equal size.Take 2 eggs in a bowl,beat well add salt and pepper and set aside.
    Smear some oil on workplace,take a ball and roll it into a large round roti,place some stuffing at the center and pour a tablespoon of beaten egg over it.
    Now fold and bring the upper and lower portion of the roti to the centre.And also left and right side of the roti to the center,so that it forms a square/rectangle packet.
    Put some oil over a griddle and heat it ,place the prepared paratha over the oil and now pour another tablespoon of beaten egg over the center and edges.Drizzle some more oil and cook on both sides ,make it crisp.
    Baida Roti is ready to serve enjoy as a evening snack with a cup of tea. This is quite heavy on stomach as a snack ;),but for sure one would love to eat it again and again.Worth trying this recipe,really delicious.
