All Purpose Flour: 3/4 Cup
White Sugar: 1/4 cup + 2 Tbsp
Banana Robusta : 1 1/2 large
Butter Melted:1/4 Cup
Baking Powder: 1/2 Tsp
Cooking Soda:1/2 Tsp
Step by Step Directions to make Banana Muffins :
In a mixing bowl break egg, add sugar powder and beat in hand blender till frothy. Add melted butter and banana puree. Whisk well everything together.
Sieve refined flour, baking powder, baking soda and salt. Add flour to the above wet mixture slowly. Gently fold in flour from the bottom.
Line the muffin tins and fill the batter to 2/3 of cup and bake for 18-20 minutes or till the top looks golden brown.
Enjoy hot muffins directly from the oven with a cup of coffee/tea.
1.Muffin batter consistency will be stiffer,its consistency lies between that of cake batter and cookie dough.
2. Don’t over mix the batter or else you’ll end up having dense muffins.
3.Baking time varies from oven to oven and also on size of muffin cups, so keep checking your muffins after 13 minutes,till top turns light golden brown in color.
