    Bael Sharbat is a summer's favourite, thirst quenching wood apple juice mixed with powdered jaggery and flavoured with cardamom and spices . It's simple to make , refreshing and works as a natural cooler in reducing body temperature.

    When Mercury rises high during months of April and May in India ,drinks like sharbat , chaas , lassi becomes everyone's favourite. Out of everything , few of the best juices that helps to lower the body temperature are Variyalli Sharbat , Sattu Sharbat , Shikanji and Aam Panna.

    Wood Apple / Bael fruit is a summer fruit and is highly effective against sunstroke and other health issues related to the summer season. 

    Bael Sharbat is a summer's favourite drink. It's simple to make , refreshing and effective against fatigue and loss of energy during summer.

    Wood apple has a peculiar and strong sour taste with a sweetish tone. Depending on how sour the fruit is , you can either incresse or decresse the amount of sweetner in the juice.

    Ideally , jaggery is used as a sweetener to make this juice as it is a well known combination and is effective against fatigue and loss of energy that occurs during summer.

    As wood apple has lots of health benefits , drinking this juice during summer is beneficial.

    What is Wood Apple ?

    Wood Apple is mainly cultivated in India and majorly found in Sri Lanka, Thailand and many other regions of Southern Asia. This fruit is also known as Bael fruit in North India.

    Wood apple has a tough shell with a dark brown pulp inside containing resinous hairy seeds. Bael has a sour, sweet taste with an acidic flavour.

    Benefits of Wood Apple

    Wood apple is a rich source of fibre and vitamin C. Drinking a glass of wood apple juice protects the body against sun stroke ; also helps in digestion and keeps the gut healthy.

    High in anti-oxidant properties and thus helpful against ulcer and piles.

    Wood apple is rich in thiamine and riboflavin, these chemicals are effective in detoxifying the body. And helps to diminish kidney and liver problems.

    High in vitamin C content, the fruit prevents the development bleeding gums (scurvy). Also, the fruit protects the body against all sorts of viral infections and strengths the immune system.

    Ingredients

    To make this summer drink , all you need is bael fruit , water, sweeter and flavouring agents and ome spices if required.

    Bael Fruit / Wood Apple - Always choose ripen wood apple to make this juice. Ripen pulp will be soft and dark brown in colour.

    Sweetener - I prefer to use organic powderd jaggery to make this juice .You can also use jaggery cubes . If jaggery is not available then you can use sugar.

    Flavours - Cardamom powder is used to flavour the juice. Adding pinch of Black salt helps to balance out the flavours.

    Add-on's ,optional - You can also add pinch of roasted cumin powder and blackpepper powder , if you like a hint of heat in your drink.

    Water - You can use chilled water as required to thin out the pulp and to help extract juice from pulp.

    Top Tip

    Soaking wood apple pulp in water makes the whole process of extracing juice easier.

    How to make Bael Sharbat

    Crack open the hard shell of Wood apple.  If the fruit is fully ripened it looks dark brown in colour.

    Scoop out the pulp of the fruit into a bowl. I got around 1 cup of fruit pulp.

    Add powdered jaggery or any sweetener of your choice.

    Add 1 cup of water to soak the pulp. Let it sit for 20 to 30 minutes.

    After 20 minutes, strain and extract the juice completely from pulp.

    Now add in black salt, cardamom powder and add-on’s if any (black pepper powder and cumin powder)

    Stir well , add 4 cups of chilled water. Taste and adjust sweetener, if required.

    Serve in a tall glass with some ice cubes and mint leaves .

    Ingredients 

    • 1 wood apple - fully ripe , large
    • 5 tablespoon jaggery powdered - or as required
    • 5 cups water or as required
    • ½ teaspoon cardamom powder
    • 1-2 pinch black salt

    Optional Add on’s

    • ¼ teaspoon black pepper powder
    • ¼ teaspoon roasted cumin powder

    Instructions

    FAQ's

    Can I store this juice?

    Yeah , you can store the concentrate in refrigerator upto1 week . Dilute it by adding water as required , stir well and serve chilled.
