Mango Lassi is a summer drink in India made with yogurt , cream / milk , sugar and flavored with cardamom powder . For flavoring Lassi , you can add rose water or cardamom powder and garnish with cardamom powder and nuts.

Basically , Lassi is traditional, thick, creamy yogurt based drink native of Punjab. Lassi is a refreshing summer drink used to quench thirst .

Other summer cooler recipes popular in India are Aam Panna , Saunf Sharbat , Masala Chass and Solkadi.

    About this recipe

In a country like India with a rich and vast food culture with myriad cuisines different food culture are adapted according to regional availability of produce as well as climate. And one such kind is a famous Punjabi Lassi which is loved and adapted across the globe.

Traditionally Punjabi Lassi is made by churning thick creamy yogurt with a wooden hand blender ( manth - kannada and madani in Hindi ) till creamy and frothy . But you can alternatively use wired blender or electric blender to whisk yogurt till creamy . Then sugar is added as per taste and flavored with either cardamom powder or rose water.

Fruit based Lassi are very similar to yogurt smoothie and one of my favourite is Strawberry Lassi .

To make fruit based lassi all you need is to mix fruit puree with yogurt, sweetner and milk ,depending on how thick or thin your Lassi need to be. For a thicker lassi , additional milk or ice cubes are not added.

Chilled lassi is refreshing , hence it is always recommended to use chilled full fat yogurt and chilled fruit. Also if you are thinning your lassi for a lighter version then you can add ice cubes and chilled milk in the place.

As I prefer thick mango lassi , I have not used milk or ice cubes in this recipe . But feel free to use , if you prefer. Also if you are thinning lassi , check on the amount of sweetness . You may need to add more sugar / honey as per your taste.

    How to make Mango Lassi

Cut 4 ripen sweet Alphonso mango or any variety of sweet mango to get about 2 cups of mango pulp.

Add mango pulp in a blender along with sugar. Add sugar depending on the sweetness of mangoes , I have added 4 tablespoon of sugar as my mangoes were very sweet and also I am not thinning the lassi. For thinner lassi you may need 1 or 2 tablespoon of extra sugar depending on your taste.

Blend Mango to a smooth puree and set aside.

In a deep bowl , add 2 cups of chilled ,  full fat yogurt and 2 tablespoon of fresh cream . Adding cream is optional , if you want a thinner version of mango lassi then don't add cream.

Now using a wooden hand blender , churn well till yogurt turns smooth and creamy . You can also use electric blender or wired whisk to beat yogurt.

Now add Mango puree, mix well and churn til well blended.

Add ½ teaspoon of cardamom powder , mix well .

Transfer to  mango lassi to serving glass and garnish with mango pulp ,almonds  ,pista and saffron , serve chilled.
