Mango Lassi recipe with step by step photos and short video. Mango Lassi is a summer drink in India made with yogurt , cream / milk , sugar and flavored with cardamom . Basically , Lassi is traditional, thick, creamy yogurt based drink native of Punjab. Lassi is considered as a summer drink to quench your thirst . For flavoring Lassi , you can add rose water or cardamom powder and garnished with cardamom powder and nuts.
In a country like India with a rich and vast food culture with myriad cuisines different food culture are adapted according to regional availability of produce as well as climate. And one such kind is a famous Punjabi Lassi which is loved and adapted across the globe.
Traditionally Punjabi Lassi is made by churning thick creamy yogurt wooden hand blender ( manth – kannada and madani in Hindi ) till creamy and frothy . But you can alternatively use wired blender or electric blender to whisk the yogurt till creamy .Then sugar is added as per taste and later flavored with either cardamom powder or rose water.
Fruit based Lassi are very similar to smoothie / milkshake . Fruit pulp is blended along with yogurt and milk . Depending on thick or thin Lassi amount of milk / water can be added . For a thicker version , no need of additional milk / water.
As chilled Lassi is relished , it is recommended to use chilled full fat yogurt and chilled fruit. Also if you are thinning your lassi for a lighter version then you can add ice cubes and chilled milk in the place.
Here as I have made thick mango lassi , I have not used milk or ice cubes . You can use it if you want. Also if you are thinning it , check on the amount of sweetness . You may need to add more sugar / honey / jaggery as per your taste.
